You'll Never Use a Skillet Again After Learning Molly's Baked Egg Hack
This tip takes breakfast to a whole new level.

Every weekend I look forward to buying a delicious breakfast sandwich at my local bagel shop, but seeing Molly Yeh make her hearty Bacon, Egg and Cheese Bagels on Girl Meets Farm made me want to skip the trip and try making Molly’s sandwich at home instead.
In this weekend’s episode, Molly stacks layers of ooey-gooey cheese, Sambal-coated bacon and fluffy eggs onto homemade bagels. The best-looking part about this breakfast sandwich, though, is the impeccable layering. Molly makes sure each layer is the same shape and size in order to curate the perfect bite, and doing so is actually a lot easier than you might think.
In order to get that perfect layering, Molly bakes her eggs in a square pan. She starts by making an egg mixture with whole milk and a little all-purpose flour. “I'm gonna start with two tablespoons of all-purpose flour,” she says, “and this is because sometimes, when you bake eggs, moisture leaches out of them. A little bit of flour goes a long way in holding that moisture all together.”
She then pours the egg mixture to an 8-inch square pan, adds dollops of cream cheese for extra cheesiness and scallions for freshness, and bakes for 20-25 minutes. The result is a perfectly square sheet of fluffy eggs that are ready to be cut into the perfect shape for breakfast sandwiches.
“This baked egg is gonna be sturdy,” Molly says. “It'll be even, layered throughout the sandwich and that way, you'll get uniform bites every time.”
Thanks to Molly, I may never go back to making unevenly shaped eggs again!
